Simone Embacher

Founder of the Emperor Snail

Five years ago, Simone Embacher laid the foundation for making this ancient and valuable food, the snail, available regionally and in high quality again in western Austria.

The first two small enclosures were built in autumn 2018 and since then Tyrol's first snail breeding has grown steadily but in a controlled manner. When Simone founded her farm, she wanted more sustainability for Tyrolean gastronomy, a new interpretation of old varieties of enjoyment.

Future Food

It is time for new concepts in agriculture.

As a self-taught newcomer, she dealt with the subject, read books, attended seminars and exchanged ideas with like-minded people. The first 500 animals she bought back then have now grown to well over 50,000.

Slow Food

Enjoyment is the pleasure of slowness.

In order to break prejudices about the snail as a food and to give people an insight into snail farming, tours with small tastings are offered regularly on the farm.
